blueberry lemon poppyseed chia pudding

An easy, healthy breakfast you might even want for dessert. Fresh and spring-y.

Blueberries are a stellar source of antioxidants, plus you’ll get protein and healthy fats from the chia seeds.

blueberry lemon poppyseed chia pudding

vegan, gluten-free, soy-free, sugar-free

serves 1

blueberry lemon poppyseed chia pudding w: avocado
ingredients
3/4 cup homemade hemp milk
1/4 cup blueberries
4 tbsp chia seeds
1 tsp poppy seeds
1 tbsp raw almond butter
1 tbsp unsweetened coconut shreds
1/4 tsp vanilla extract
1 tsp lemon zest
1 tbsp lemon juice
1/4 tsp cinnamon
1/8 tsp cardamom
1/8 tsp ginger
1/8 tsp turmeric
pinch sea salt

toppings

1/4 avocado

raw unsalted cashews

unsweetened coconut shreds

tahini

instructions
Combine + let sit overnight.
Stir the next morning.
Top with 1/4 avocado, coconut shreds, tahini + cashews.


homemade hemp milk

vegan, gluten-free, soy-free, sugar-free

makes approximately 3 cups

ingredients
1/2 cup hemp seeds
2 1/4 cup water [add more to desired consistency]
pinch sea salt
1 tsp vanilla extract [optional]
3-5 drops stevia extract [other sweetener options: 1 tsp maple syrup or raw local honey]

instructions

Blend water with hemp seeds until relatively smooth.

Optional: strain in cheesecloth or nut milk bag to separate the pulp [save it for smoothies or baked goods].

Rinse blender, add remaining ingredients + blend until combined.

Store in air-tight container for up to 7 days in the fridge.

  • 1/4 cup blueberries fresh or frozen
  • 4 tbsp chia seeds
  • 1 tsp poppy seeds
  • 1 tbsp raw almond butter
  • 1 tbsp unsweetened coconut shreds more to top with
  • 1/4 tsp vanilla extract
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • 1/4 tsp cinnamon
  • 1/8 tsp ground cardamom
  • 1/8 tsp groundn turmeric
  • 1/8 tsp ground ginger
  • 1 pinch sea salt
  • 1/4 avocado to top
  • 1 tsp pumpkin seeds to top
  • 1 tbsp tahini to top

Instructions
 

  • Combine + let sit overnight.
  • Stir the next morning.
  • Top with 1/4 avocado, coconut shreds, tahini + pumpkin seeds.
