*no specific measurements - add everything to taste until it's mixed into a cookie dough consistency

Cuisine breakfast + brunch, gluten-free, sugar-free, vegan
- organic peanut or almond butter
- tapioca flour or almond meal
- vanilla protein powder [optional]
- raw honey or maple syrup
- dark chocolate chunks
- goji berries
- unsweetened coconut shreds to coat
Mix all ingredients together [except coconut shreds] until it's the consistency of cookie dough and roll into balls, then roll/coat in coconut flakes.
Once rolled and coated, place in the fridge to harden or freeze until ready to eat.
