fitness + foolishness nut butter balls

free of dairy, soy, gluten, refined-sugar *no specific measurements - add everything to taste until it's mixed into a cookie dough consistency

Ingredients
  

  • organic peanut or almond butter
  • tapioca flour or almond meal
  • vanilla protein powder [optional]
  • raw honey or maple syrup
  • dark chocolate chunks
  • goji berries
  • unsweetened coconut shreds to coat

Instructions
 

  • Mix all ingredients together [except coconut shreds] until it's the consistency of cookie dough and roll into balls, then roll/coat in coconut flakes.
  • Once rolled and coated, place in the fridge to harden or freeze until ready to eat.
