apple pie coconut oatmeal

Ingredients
  

  • 1/2 cup gluten-free rolled oats
  • 1 cup water [sub unsweetened nut/seed milk of choice]
  • 2 pinches sea salt
  • 1/2 apple chopped small
  • 1 tbsp coconut oil
  • 1-2 tbsp unsweetened shredded coconut
  • 1/4 tsp lemon zest [to taste]
  • 1-2 tsp pure maple syrup [or raw local honey, to taste]
  • 1/2-1 tsp vanilla extract
  • 1 tbsp raw sesame seeds [or pecans, walnuts, almonds]
ground spices to taste
  • cinnamon
  • nutmeg
  • ginger
  • turmeric
  • clove [optional]
toppings
  • 1 tbsp raw pumpkin seeds
  • 1 large dollop Anita's coconut yogurt [or yogurt of choice]
  • 1 tbsp Nuttzo Crunchy Seven Nut & Seed Butter [not pictured]

Method
 

  1. In a small pot, boil water/nut or seed milk with pinch sea salt.
  2. Combine oats with spices + 1 pinch sea salt, stir into boiling water.
  3. Reduce to simmer + stir in remaining ingredients about 5 minutes into cooking/5 minutes before removing from heat.
  4. Cook for 10-15 minutes total to desired consistency.
  5. Remove from heat + add toppings to taste.
