soft scramble on toast [or breakfast sandwich]
vegetarian, gluten-free, sugar-free, soy-free
- 2 organic eggs
- less than 1/4 cup coconut milk (or non-dairy milk of choice)
- 1 tbsp coconut oil
- 2 slices gluten-free bread (free bread inc. or food for life brown rice bread)
- 1-2 tbsp ghee
- nutritional yeast (to taste)
- S+P (to taste)
- oregano (to taste)
- hot sauce (to taste)
- 1/4 avocado (to top)
- heat up pan with coconut oil on medium high heat.
- crack eggs directly into pan and start to lower heat to medium low.
- start to scramble by gently stirring eggs, breaking yoke.
- once slightly scrambled add splash of coconut or non-dairy milk.
- stir gently until combined so eggs are still soft.
- add oregano, S+P to taste and remove from heat.
- toast bread + spread ghee on top to taste.
- top toasted bread with eggs, hot sauce to taste + avocado.
