2/3 cup water or unsweetened non-dairy milk
1/2 apple, chopped into chunks
1 tbsp unsweetened shredded coconut [I used Let’s Do… Organic]
2 tbsp chopped walnuts
1 tbsp raw almond butter [I like Once Again Nut Butter or Woodstock Foods, or freshly ground at your local store]
1 tsp raw honey [local if possible]
1/2 tsp ground cinnamon
1/4 tsp ground ginger
1/8 tsp ground nutmeg
1/8 tsp ground cardamom
1/8 tsp ground turmeric
pinch sea salt
instructions
Combine all ingredients in a jar and refrigerate overnight [or at least 2 hours], except coconut oil.
Heat 1 tbsp coconut oil in small saucepan on medium low heat, add overnight oats + stir on low until heated through.
Top with additional walnuts, cinnamon + unsweetened coconut shreds if desired.
