Apple sauce meets pumpkin pie meets pudding meets porridge…

Whatever it is, it’s easy and delicious and you need it for breakfast this fall/winter.

After a recent visit to goddess Dr. Pratima Raichur, Ayurvedic practitioner in NYC, I was told it would benefit me for the time being to eat only cooked vegetables and little to no fruit [cooked or stewed, if so].

Other wisdom nuggets offered by Dr. Raichur were to wake up every morning, put my hand on my beating heart, and say, “I am happy, healthy, fulfilled.” She explained that each cell in our body is alive, and it responds to whatever we communicate to ourselves and the universe. So: love your body, and it will love you back.

apple pumpkin pudding porridge

free of dairy, gluten, soy, added sugar

serves 2

ingredients

2 apples, chopped [organic if possible]

1/2 cup h2o [to steam apples]

1/2 cup pumpkin puree [or steamed pumpkin/squash]

1 tbsp coconut oil

2 tbsp unsweetened shredded coconut

1-2 tbsp tahini [or nut/seed butter of choice]

1/4 cup walnuts, chopped

2 tbsp pumpkin seeds [to top, optional]

1 tbsp Nuttzo Seven Seed & Nut Butter [to top, optional]

ground spices to taste

cinnamon

nutmeg

ginger

cloves

turmeric

1 pinch sea salt

instructions

Steam apples in water in a medium saucepan, covered, on medium heat until soft [approximately 3-5 minutes].

Discard water [or keep for a tasty warm beverage], stir in remaining ingredients and reduce heat to low.

Serve warm topped with Nuttzo Seven Seed & Nut Butter, unsweetened shredded coconut, and pumpkin seeds.
