artichoke + spiced chickpea pancake + za’atar coyo dip

Eat your [artichoke] heart out to regulate blood pressure, blood sugar, cholesterol, the gut and the liver. Profit from a plethora of nutrients, potassium, and antioxidants to boot.

artichoke: steamed with bay leaves and French salt, drizzled with evoo (inspired by Divya Alter’s recipe from What To Eat For How You Feel).

chickpea pancake: garbanzo bean flour, turmeric, za’atar, psyllium husk, evoo, s+p, H2O – all whisked together and pan fried in sesame oil.

coyo dip: Abbot Kinney’s Greek-style coconut yogurt (sub Anita’s coyo if you’re in the states), pinch of za’atar, gomasio, evoo, lime.
