go-to tahini salad dressing

When I say salad, I don’t mean a lousy pile of lettuce and thin strips of raw veggies. My version of my daily lunch salad includes hearty greens, sometimes grains like quinoa or millet, protein like beans or legumes, and whatever other seasonal veggies I find at the farmer’s market. And avocado, as often as humanly possible.

Although I love variety, I am also a creature of habit, hence my dressing is usually the same every day and I have yet to tire of it. It’s been a hit at various summer pot-lucks and parties, so I’ve gotten verification from others. This dressing will transition through every seasonal salad of your choice.

Good for 2-4 meal-sized salads.
Cuisine gluten-free, salads, soy-free, sugar-free, vegan, vegetarian
Servings 4 servings

Ingredients
  

  • 3 tbsp EVOO
  • 1 tbsp apple cider vinegar or vinegar of choice [I like balsamic or ume plum vinegar, or coconut aminos]
  • 2 tbsp lemon juice to taste
  • 1 tsp dijon mustard optional
  • 1 tbsp tahini [I like Woodstock Foods or Once Again Nut Butter]
  • 1 tsp chia seeds add more for thicker texture
  • 1/8 tsp turmeric
  • 1/2 tsp garlic powder to taste
  • S+P to taste
  • herbs add herbs + spices to taste like rosemary + thyme, cumin, coriander, etc

Instructions
 

  • Mix together thoroughly + store in airtight container in fridge for 4-7 days.

Notes

*If you like it sweet, add 1 tsp raw honey or pure maple syrup.
