superfood oatmeal
vegan, gluten-free, sugar-free, soy-free
- 1/3 cup oats (purely elizabeth organic original ancient grain oatmeal)
- 2/3 cup coconut milk (or nut/seed milk of choice)
- 1/4 avocado (ripe, mashed)
- 1-2 tbsp sunflower butter (or nut/seed butter of choice)
- 1-2 tbsp coconut shreds (unsweetened )
- ½ – 1 tsp green powder (healthforce nutritionals vitamineral green powder [or green powder of choice])
- cinnamon (to taste)
- sea salt (to taste)
- walnuts (to garnish)
- goji berries (to garnish)
- cook oatmeal as directed.
- before oatmeal is finished cooking stir in green powder, cinnamon, salt, 1 tbsp of the coconut shreds.
- remove from heat, stir in sunflower seed/almond butter and mashed avocado until thoroughly combined.
- garnish with rest of coconut shreds, chopped walnuts, goji berries to taste.
