spinach tofu scramble: breakfast of vegan champions

vegan, gluten-free, sugar-free

scramble

  • 1-2 cups spinach
  • 1/4 package tofu (firm)
  • 2 tbsp coconut oil (or ghee [not vegan])
  • pinch cayenne (to taste [approx 1/8 tsp])
  • S+P (to taste)
  • nutritional yeast (to taste)

brown rice side

  • 1/3-1/2 cup brown rice (cooked, leftover or fresh)
  • 1-2 tsp maple syrup
  • S+P (to taste)

scramble

  1. combine all ingredients in medium heat skillet until spinach is wilted + tofu is golden.

brown rice

  1. toast in medium heat skillet until golden and crispy.
