spinach tofu scramble: breakfast of vegan champions
vegan, gluten-free, sugar-free
scramble
- 1-2 cups spinach
- 1/4 package tofu (firm)
- 2 tbsp coconut oil (or ghee [not vegan])
- pinch cayenne (to taste [approx 1/8 tsp])
- S+P (to taste)
- nutritional yeast (to taste)
brown rice side
- 1/3-1/2 cup brown rice (cooked, leftover or fresh)
- 1-2 tsp maple syrup
- S+P (to taste)
scramble
- combine all ingredients in medium heat skillet until spinach is wilted + tofu is golden.
brown rice
- toast in medium heat skillet until golden and crispy.
