I used a blender to mix the strawberries into the batter, which made the pancakes slightly pink and super delicious, but you could also just fold chopped strawberries into the batter, too.
Health benefits of strawberries: Vitamin C, antioxidants (primarily anthocyanin), minerals (manganese, potassium, folic acid), good for blood sugar and heart health, and more.
Please note: I whipped these together on a whim, so adjust flour and milk ratios as needed for your desired batter consistency, and edit your sweetener to taste.
Morning matcha tip: Try my go-to matcha latte and blend in a bit of tahini. I love a morning (or afternoon) matcha, and it paired perfectly with the pancakes.

Strawberry Spring Pancakes
Can be adjust to be free of wheat / gluten / soy / refined sugar / lactose
Serves 1 [or 2 if enjoying as a side]
Batter Ingredients
- ~2/3 cup spelt or buckwheat flour (sub flour of choice, or use a combo)
- 1/4 tsp cinnamon, ground
- 1 tsp vanilla sugar, optional (sub 1-2 tsp maple syrup or coconut sugar, to taste)
- ~1/4 tsp vanilla powder or 1/2 tsp vanilla extract (to taste)
- 1/8 tsp baking powder
- dash of sea salt
- ~1/2 cup whole or non-dairy milk (I soaked sunflower seeds and blended with water for sunflower milk – cashew or coconut milk would also be delicious non-dairy options)
- 1/2 tsp coconut oil, melted (sub butter or ghee)
- 1 medium egg (see below for vegan egg replacers)
- ~1/2 cup strawberries, chopped (to taste)
- Squeeze of lime or lemon juice
- Love
Optional batter additions
- Chopped almonds
- Chopped dark chocolate
- Unsweetened shredded coconut
- Finely chopped rhubarb (let it sit in a bit of raw sugar for 20+ minutes beforehand, or sauté it first in a bit of coconut oil or ghee until soft)
For Pan-Frying
- Coconut oil (sub butter or ghee)
Instructions
- Whisk dry ingredients together.
- Blend or whisk together milk, egg, and melted coconut oil – add in strawberries if desired.
- Whisk all ingredients together until smooth.
- Gently fold in additions of choice – add chopped strawberries if desired.
- Heat a skillet / frying pan on medium heat – add ghee or coconut oil.
- Spoon or pour batter onto the pan to desired size.
- When bubbles form at the top and the bottom of the pancake can slide easily, flip to the other side.
- After a few minutes, check the bottom – both sides should be golden brown and not gooey.
- Serve warm with with desired toppings and enjoy.
Topping Inspiration
- Rhubarb jam (sub jam of choice)
- Strawberries (sub berries or fruit of choice – Ayurveda recommends cooking fruit when combined with other foods if you have a sensitive digestion)
- Tahini or almond butter (I used white tahini – mix it with maple syrup and vanilla for a deluxe drizzle)
- Toasted almonds or sunflower seeds
- Local honey or pure maple syrup
- Toasted unsweetened shredded coconut
- Dark chocolate (see below for my favorites)
- Fresh mint
- Fresh whipped cream or yogurt of choice
Notes
- Vegan egg replacers: 1 Tbsp flaxseed meal + 3 Tbsp warm water /or/ 2 Tbsp water + 1 tsp olive oil + 2 tsp baking powder whisked /or/ 1 tsp baking soda + 1 Tbsp apple cider vinegar /or/ 1/4 cup unsweetened apple sauce.
- Sunflower seed milk (one serving): Soak ~2 Tbsp raw sunflower seeds in filtered water overnight, rinse and drain, blend with ~1/2-1 cup filtered water and a pinch of salt – add 1/2 a date, 1/2 tsp maple syrup, or a pinch of vanilla if desired. No need to strain the pulp if it’s for the pancake batter.
