What a joy to make pancakes, especially when they are literally delicious and nutritious. Bonus: your kitchen [or your entire tiny apartment] will smell divine.

These are so easy to make, and turmeric has a slew of health benefits to boot.

golden chocolate chunk buckwheat pancakes

free of gluten / soy / refined sugar / lactose
serves 1 [or 2 if enjoying as a side]

ingredients

  • 1/2 tsp turmeric, ground
  • 1/4 tsp cinnamon, ground
  • 1/8 tsp cardamom, ground
  • 1/8 tsp nutmeg, ground
  • 1/4 tsp ginger, ground
  • dash of sea salt + black pepper
  • *option: sub all spices above with 1 tsp La Main Noir golden paste
  • 1 large medjool date [sub 1-2 Tbsp maple syrup or coconut sugar, to taste]
  • 1/8-1/4 cup boiled water or milk of choice [to soak + mash the date]
  • 1/4-1/2 tsp vanilla extract
  • 1/4-1/2 tsp coconut oil
  • 1 medium egg [see below for vegan egg replacers]
  • 1/4-1/3 cup buckwheat flour [sub flour of choice]
  • 1/8 tsp baking powder
  • 1/4 tsp psyllium husk [optional]
  • 10 toasted almonds, roughly chopped [sub nuts or seeds of choice]
  • 1 large square of dark chocolate bar, chopped [see below for chocolate preferences]

for pan-frying

  • ghee or coconut oil 

topping inspiration

  • toasted nuts or seeds of choice
  • tahini or almond butter
  • local honey or pure maple syrup
  • sprinkle of sea salt
  • toasted unsweetened shredded coconut
  • unsweetened cacao nibs
  • pomegranate seeds

instructions

  • soak date in boiled water or milk – add golden paste if using / add vanilla at the end once cooled.
  • mash date into a liquid-y paste.
  • *if not using date – mix maple syrup with vanilla and egg / mix coconut sugar with dry ingredients.
  • whisk dry ingredients together.
  • whisk egg and wet ingredients into dry ingredients until smooth.
  • gently fold in chopped almonds and chocolate.
  • heat a skillet / frying pan on medium heat – add ghee or coconut oil.
  • spoon or pour batter onto the pan to desired size.
  • when bubbles form at the top and the bottom of the pancake can slide easily, flip to the other side.
  • after a few minutes, check the bottom – both sides should be golden brown and not gooey.
  • serve warm with with desired toppings and enjoy.
