quinoa/brown rice breakfast with cinnamon apples

vegan, gluten-free, soy-free, sugar-free

  • 1 tbsp coconut oil
  • 1 cup quinoa (or brown rice, cooked)
  • 1/2 apple (thinly sliced)
  • 1/2 tsp cinnamon
  • 1 pinch nutmeg (ground)
  • 1 pinch ginger (ground)
  • 1/2-1 cup coconut milk (or unsweetened non-dairy milk of choice)
  • 1 tsp raw honey
  • 1 sprinkle pumpkin seeds
  • 1 pinch sea salt (to taste)
  1. saute apples with cinnamon and coconut oil until soft.
  2. throw in rest of ingredients and simmer until warm on medium low heat.
