quinoa/brown rice breakfast with cinnamon apples
vegan, gluten-free, soy-free, sugar-free
- 1 tbsp coconut oil
- 1 cup quinoa (or brown rice, cooked)
- 1/2 apple (thinly sliced)
- 1/2 tsp cinnamon
- 1 pinch nutmeg (ground)
- 1 pinch ginger (ground)
- 1/2-1 cup coconut milk (or unsweetened non-dairy milk of choice)
- 1 tsp raw honey
- 1 sprinkle pumpkin seeds
- 1 pinch sea salt (to taste)
- saute apples with cinnamon and coconut oil until soft.
- throw in rest of ingredients and simmer until warm on medium low heat.
