quinoa/brown rice breakfast with cinnamon apples

Servings 1 serving

Ingredients
  

  • 1 tbsp coconut oil
  • 1 cup quinoa or brown rice, cooked
  • 1/2 apple thinly sliced
  • 1/2 tsp cinnamon
  • 1 pinch nutmeg ground
  • 1 pinch ginger ground
  • 1/2-1 cup coconut milk or unsweetened non-dairy milk of choice
  • 1 tsp raw honey
  • 1 sprinkle pumpkin seeds
  • 1 pinch sea salt to taste

Instructions
 

  • saute apples with cinnamon and coconut oil until soft.
  • throw in rest of ingredients and simmer until warm on medium low heat.
