breakfast/brunch taco/burrito

Whether it’s breakfast or brunch, taco or burrito – this is super simple and satisfying to make for yourself or a weekend brunch crew.

 

vegan, gluten-free, soy-free, sugar-free

serves 1

 

ingredients

1 brown rice tortilla [I used Food For Life]

2 farm fresh eggs, cooked to your preference

1 tbsp tahini

1 radish, thinly sliced

1/4 avocado

1  handful baby kale [or greens of choice]

1 tbsp coconut oil [or ghee if pan-frying eggs]

1 tbsp pumpkin seeds, to top

 

spices to taste

garlic powder

cumin

turmeric

  • 1 brown rice tortilla
  • 2 eggs cooked to your preference
  • 1 tbsp tahini
  • 1 radish thinly sliced
  • 1 handful baby kale or greens of choice
  • 1 tbsp coconut oil or ghee, if pan-frying eggs
  • 1 tbsp pumpkin seeds to top
  • sea salt to taste
  • ground pepper to taste
  • cumin to taste
  • ground turmeric to taste
  • oregano to taste
  • garlic powder to taste

Instructions
 

  • cook eggs per your preference + assemble.
