strawberry rhubarb overnight oats
gluten-free, sugar free, vegan, soy-free
Ingredients
- 1/2 cup oats gluten-free
- 1 cup coconut milk or non-dairy milk of choice [i used so delicious coconut milk]
- 1 tbsp vega french vanilla protein powder or as a substitute add 1 tsp vanilla extract + hemp protein
- 1 tbsp chia seeds
- 1/2 tbsp ground flaxseeds
- 1/2 tbsp goji berries and/or mulberries
- 1 tbsp almonds thinly sliced
- 2 tbsp strawberries thinly sliced
- 2 tbsp rhubarb thinly sliced
- 1 tbsp shredded coconut unsweetened
- cinnamon, turmeric, nutmeg, cardamom to taste - use your favorite spices
- 1 tsp healthforce vitamineral green powder or green powder of choice, optional
Instructions
- mix all ingredients well in large jar
- let sit for a few hours or overnight
- enjoy in the morning

all measurements approximate - experiment + adjust to your taste.
i found this plenty sweet but if you need it sweeter add 1 tbsp raw honey or maple syrup
