strawberry rhubarb overnight oats

gluten-free, sugar free, vegan, soy-free

  • 1/2 cup oats (gluten-free)
  • 1 cup coconut milk (or non-dairy milk of choice [i used so delicious coconut milk])
  • 1 tbsp vega french vanilla protein powder (or as a substitute add 1 tsp vanilla extract + hemp protein)
  • 1 tbsp chia seeds
  • 1/2 tbsp ground flaxseeds
  • 1/2 tbsp goji berries (and/or mulberries)
  • 1 tbsp almonds (thinly sliced)
  • 2 tbsp strawberries (thinly sliced)
  • 2 tbsp rhubarb (thinly sliced)
  • 1 tbsp shredded coconut (unsweetened)
  • cinnamon, turmeric, nutmeg, cardamom (to taste – use your favorite spices)
  • 1 tsp healthforce vitamineral green powder (or green powder of choice, optional)
  1. mix all ingredients well in large jar
  2. let sit for a few hours or overnight
  3. enjoy in the morning

all measurements approximate – experiment + adjust to your taste.

i found this plenty sweet but if you need it sweeter add 1 tbsp raw honey or maple syrup
