strawberry rhubarb overnight oats

gluten-free, sugar free, vegan, soy-free
Cuisine gluten-free, vegan
Servings 1 serving

Ingredients
  

  • 1/2 cup oats gluten-free
  • 1 cup coconut milk or non-dairy milk of choice [i used so delicious coconut milk]
  • 1 tbsp vega french vanilla protein powder or as a substitute add 1 tsp vanilla extract + hemp protein
  • 1 tbsp chia seeds
  • 1/2 tbsp ground flaxseeds
  • 1/2 tbsp goji berries and/or mulberries
  • 1 tbsp almonds thinly sliced
  • 2 tbsp strawberries thinly sliced
  • 2 tbsp rhubarb thinly sliced
  • 1 tbsp shredded coconut unsweetened
  • cinnamon, turmeric, nutmeg, cardamom to taste - use your favorite spices
  • 1 tsp healthforce vitamineral green powder or green powder of choice, optional

Instructions
 

  • mix all ingredients well in large jar
  • let sit for a few hours or overnight
  • enjoy in the morning

Notes

all measurements approximate - experiment + adjust to your taste.
i found this plenty sweet but if you need it sweeter add 1 tbsp raw honey or maple syrup
