spinach tofu scramble: breakfast of vegan champions

vegan, gluten-free, sugar-free
Servings: 1 serving

Ingredients
  

scramble
  • 1-2 cups spinach
  • 1/4 package tofu firm
  • 2 tbsp coconut oil or ghee [not vegan]
  • pinch cayenne to taste [approx 1/8 tsp]
  • S+P to taste
  • nutritional yeast to taste
brown rice side
  • 1/3-1/2 cup brown rice cooked, leftover or fresh
  • 1-2 tsp maple syrup
  • S+P to taste

Method
 

scramble
  1. combine all ingredients in medium heat skillet until spinach is wilted + tofu is golden.
brown rice
  1. toast in medium heat skillet until golden and crispy.
