spinach tofu scramble: breakfast of vegan champions
vegan, gluten-free, sugar-free
Ingredients
scramble
- 1-2 cups spinach
- 1/4 package tofu firm
- 2 tbsp coconut oil or ghee [not vegan]
- pinch cayenne to taste [approx 1/8 tsp]
- S+P to taste
- nutritional yeast to taste
brown rice side
- 1/3-1/2 cup brown rice cooked, leftover or fresh
- 1-2 tsp maple syrup
- S+P to taste
Instructions
scramble
- combine all ingredients in medium heat skillet until spinach is wilted + tofu is golden.
brown rice
- toast in medium heat skillet until golden and crispy.
