pumpkin apple pear porridge
vegan, gluten-free, soy-free, sugar-free
- 1 tbsp coconut oil
- 1 cup quinoa (cooked)
- 1/2 apple (thinly sliced)
- 1/2 pear (thinly sliced)
- 1 tbsp sunflower butter (or nut/seed butter of choice)
- 2 tbsp pumpkin (roasted or baked, canned or not)
- 1/2 cup coconut milk (or non-dairy milk of choice)
- 1/2 tsp pumpkin pie spice (or any mix of cinnamon, nutmeg, ginger + cloves to taste)
- 1 pinch sea salt
- 1/2 tsp vanilla extract
- 1/2 tbsp shredded coconut (unsweetened)
- 1 tsp pumpkin seeds
- 1 tbsp walnuts (chopped)
- saute apples in coconut oil on low until slightly browned, throw in pears + saute until soft/golden.
- add pumpkin + mix in until soft, add hemp milk + quinoa. stir.
- add sunflower seed butter, spices, vanilla extract + coconut shreds; stir until creamy.
